Curried Beef And Potato Pie

Ingredients
3 medium-sized potatoes
1/2 tbsp butter
1/2 cup hot milk
Salt and pepper
1 medium-sized carrot, cut into small cubes
1/2 cup fresh or frozen peas
1 packet Brahim’s Beef Curry with Potatoes (or Brahim’s Chicken Curry with Potatoes)
2 tbsp grated Cheddar cheese
Scrub the potatoes clean under running water. Place in a pan and cover generously with water. Put to boil until tender. Drain and when cool enough to handle, peel.
Pat the beancurd with paper towels to remove excess moisture. Cut into cubes, 2cm x 2cm. Heat oil in a wok and fry the beancurd cubes, a few at a time, until golden brown. Drain on absorbent paper.

Mash potatoes, adding the butter, hot milk and salt and pepper to season.
Cook the carrots, in a little water until tender. Drain and combine this with the peas and Brahim’s Beef and Potato Curry.
Turn the mixture into a shallow ovenproof dish and cover with the mashed potatoes. Sprinkle with a little-grated cheese. Bake in a hot oven until golden brown.
