Honey Prawns
and Mango Kerabu

Honey Prawns and Mango Kerabu 

(with Brahim’s Honey Chicken Sauce)
Serves 4

Ingredients for Kerabu:
1 large green Maha mango shredded
1 small cucumber, shredded
2 tbsp chopped fresh coriander
6 shallots, sliced
4 chilli padi, sliced
1 pc kaffir lime leaf, sliced finely
1 stalk lemongrass, sliced finely 
Juice from 2 limes
2 tbsp fish sauce
2 tbsp castor sugar

Ingredients for Honey Prawns:
300g prawns, peeled and deveined
1/2 packet Brahim’s Honey Chicken Sauce
3 tbsp sugar
1/2 tsp salt
Oil for cooking

Toss all kerabu ingredients together and set aside to chill.

Marinate prawns with Brahim’s Honey Chicken Sauce, salt and sugar for 10 minutes.  Heat 2 tbsp oil in frying pan and fry prawns until cooked.  Let it cool and mix together with the chilled kerabu to serve.
