Seafood In Spicy Peanut Sauce

(with Brahim’s Kuah Satay)
Serves 4

Ingredients:   
 
300 -400 g of seafood of your choice (prawns, squid, fish fillet etc)
1 stalk lemongrass (finely shredded-end part)
Few shallots (chopped)
2 red chili (seeded and sliced ) (if you prefer spicier add more chilies)
1 red bell pepper (cut into small pieces )
Few basil leaves
1 packet Brahim’s Kuah Satay
½ cup santan (coconut milk)

Method:
Heat up some oil and sauté the lemongrass and shallots.
Add in red chilies, red bell pepper, and basil leaves, till fragrant.
Add in the seafood until slightly cooked.
Add Brahim’s Kuah Satay.
Mix well and let it simmer for a few minutes.
Lastly, add in the santan and mix well. Remove from heat.
Dish up and serve with rice.
