Curried Beef and Potato Pie
(with Brahim’s Beef and Potato Curry)
Serves 4
3 medium-sized potatoes
1/2 tbsp butter
1/2 cup hot milk
Salt and pepper
1 medium-sized carrot, cut into small cubes
1/2 cup fresh or frozen peas
1 packet Brahim’s Beef & Potato Curry (or Brahim’s Chicken and Potato Curry)
2 tbsp grated Cheddar cheese
Scrub the potatoes clean under running water. Place in a pan and cover generously with water. Put to boil until tender. Drain and when cool enough to handle, peel.
Mash potatoes, adding the butter, hot milk and salt ad pepper to season.
Cook the carrots, in a little water until tender. Drain and combine this with the peas and Brahim’s Beef and Potato Curry.
Turn the mixture into a shallow ovenproof dish ad cover with the mashed potatoes. Sprinkle with a little grated cheese. Bake in a hot oven until golden brown.
